As you approach it’s important to understand your first point of contact may not be having a great day, time to change that. Greet them with a warm smile and a quick compliment about something they are wearing, their energy, etc… I like to make a little remark about how hungry I am and I’m confident they are about to solve all my problems!
“Hi how are you! I like that hat btw, are those the new ones? Man I’m starving today and have no doubt you’re about to solve all my problems! Haha”
It’s important early on in the conveyor belt process you establish a token economy. With each behavior they do well genuine praise is crucial. With behavior you don’t like, an audible grown or hmmpf may be necessary.
”Oh dang, you‘re killing it on the portions today! Are you trying to get me to mention you by name in my next Yelp review or something?”
Subtle Jedi mind tricks are needed as you arrive at the big ticket items: protein and guacamole. If you are like me, you always order double meat. However if you order double meat from the get go, you’ll likely receive two small single meat portions. The key to double meat is asking for a single serving, then having a change of heart after the first portion has been given.
Prior to the first meat serving its important you’ve continued oohing and ah-ing at the ancillary portions (veggies, beans, rice, etc…). When asked which meat, try saying “wow that steak looks amazing today, can I get a big scoop?” As they move their arm toward the meat mumble to yourself, “man I’m so hungry that looks so good.” As they finish your first portion you’ll then shock yourself out loud with “you know what, I’m feeling frisky today, lets do double meat.”
Now that you’ve obtained large meat portions, it’s time to back off. No reason to press your luck on the salsa, sour cream or cheese. These are free items and don’t really matter in terms of value per portion. We’re working our way to the guac. My strategy is to ask for smaller portions of sour cream and cheese so they feel a sense of obligation to give a larger portion of the guac.
”Just a little of sour cream please. Also a small portion of cheese.”
As you approach the guacamole we’ve primed the pump by asking for small portions of things that don’t matter, we’ve smiled, we’ve praised them for good behavior and its all going to pay off for you when you say, “can I get a BIG scoop of guac please?”
Finish with a smile and another quick compliment so they remember you for next time.

Sofritas
Carnitas (or steak)
medium salsa
small portion of corn
small portion of sour cream
small portion of cheese
BIG scoop of guac
little bit of lettuce
Bonus tip: add a healthy portion of the Chipotle Tabasco Sacue to your bowl
